Pappad Kara Kuzhambu / Pappad broth / Kara Kuzhambu / Appala kulambu / Goki’s Kitchen

Ingredients for making pappad broth/Appala kara kuzhambu:

1. Gingelly oil – 5 tbsp
2. Mustard – 1 tbsp
3. Fenugreek – 1/2 tsp
4. Urad dal – 1/2 tsp
5. Some curry leaves
6. Green Chili – 1
7. Garlic – 25 cloves
8. Small onion/shallots – 15
9. Tomato (medium size) – 1
10. Tamarind – 1 tsp (Take tamarind – 1 tsp, add a little water, soak for 15 – 20 minutes and extract tamarind pulp water)
11. Broth Powder / kulambu powder – 5 tbsp
12. Salt as required
13. Hing
14. Pappad – 5 (pappad – 5 fry in oil and make small pieces and keep aside)

Let”s start:
Step – 1:
In a pan add Gingelly oil – 5 tbsp, Mustard seeds – 1 tbsp, Fenugreek – 1/2 tsp, Urad dal – 1/2 tbsp,
Some curry leaves, Green chili – 1, Garlic cloves – 25, Small onions/shallots – 15, cook till the garlic & shallots turn golden brown.

     

Step – 2:
Add the Tomato – 1. Close the lid & cook till tomatoes become soft.

Step – 3:
Tamarind – 1 tsp (Soak the tamarind in water for about 15 – 20 minutes then squeeze the tamarind & get the pulp) Add tamarind water.

 

Step – 4:
Broth Powder / kulambu powder – 5 tbsp, Salt as required, Hing, add water as required, and boil till well thickened. Cover and cook.

 

Step – 5:
Pappad – 5 (Pappad – 5 Fry in oil and make small pieces and set aside).

Step – 6:
When the broth thickens, add the fried papad and cook for 2 minutes.
