Ingredients for making Biryani rice:
1. Basmati rice – 3 & 1/2 glasses
2. Bay leaf – 2
3. Cinnamon- 1
4. Black Cardamom – 1
5. Star Anise – 1
6. Green Cardamom – 3
7. Clove – 5
8. Shahi jeera – 1/2 spoon
9. Salt as needed
10. Oil – 1 spoon

1. Potatoes – 1/2 kg
2. Corn flour – 5 Spoon
3. Maida flour / All purpose flour / Plain flour – 5 Spoon
4. Hing

6. Kashmir Chili Powder – 1 spoon
7. Red chili Powder – 1 spoon
8. Pepper – 1/2 spoon
9. Water as required
10. Oil

1. Ghee -4 spoon
2. Oil – 4 spoon
3. Onions – 3
4. Bay leaf – 3
5. Cinnamon
6. Javitri – 1
7. Marathi Mokku – 1
8. Black Cardamom-1
9. Star Anise – 2
10. Green Cardamom – 4
11. Clove – 4
12. Stone flower
13. Shahi Jeera – 1 spoon
14. Nutmeg Powder – A pinch
15. Fennel seed- 1/2 spoon
16. Tomato – 3
17. Garlic – 10 cloves
18. Green Chilies – 3
19. Salt as needed
20. Yogurt – 8 spoon
21. Chili Powder – 1 spoon
22. Kohinoor Biryani Masala (16kg) – 2 pockets
23. Some coriander leaf, mint leaf
Ingredients for making dum:
1. Fried onions
2. Mint leaf, coriander leaf
3. Yellow milk (milk + turmeric powder) or saffron milk

Recipe description:
To make biryani rice:
Step – 1:
To make Biryani rice, boil the water & add the ( 30 min) soaked basmati rice – 3 & 1/2 glasses.
Step – 2:
Add Bay leaf – 2, Cinnamon- 1, black cardamom – 1, star anise – 1, Green cardamom – 3, cloves – 5, shahi Jeera – 1/2 spoon, salt as required, oil – 1 spoon.
Step – 3:
Mix and cover the lid cook the rice 80%.
Step – 4:
When the rice is 80% cooked, strain it and set aside. biryani rice ready.
Potato 65 Recipe Description:
Step – 1:
Boil the water into the pot and add the potatoes.cook in 50%
Step – 2:
When 50% is cooked, drain the water and set aside.
Step – 3:
Cut the potatoes into small pieces.
Step – 4:
Then add corn flour – 5 spoon, Maida flour / Plain flour / All purpose flour – 5 spoon, hing, salt as required, Kashmiri chilli powder – 1 spoon, Red chili powder – 1 spoon, Pepper – 1/2 spoon and mix well.
Step – 5:
Add the required amount of water and knead the dough well.
Step – 6:
Then add potatoes in hot oil and fry well. Set aside. Potatoes 65 ready.
Biryani Masala Recipe Description:
Step – 1:
In a large pan add ghee – 4 spoon, Oil – 4 spoon, onion – 3 fry the onion till it becomes golden brown. and transfer half of the onion to a plate. keep aside.
Step – 2:
Then add Bay leaf – 3, Cinnamon , javitri – 1, Marathi moggu- 1, black cardamom – 1, star anise – 2, green cardamom – 4, cloves – 4, a little bit of stone flower.
Step – 3:
Add Shahi Jeera – 1 spoon, Nutmeg Powder – (only a pinch), Fennel seed- 1/2 spoon and mix well.
Step – 4:
Tomatoes – 3, Garlic – 10 cloves cut into small pieces then add, Green Chillies – 3, Add the required amount of salt and cook until tomatoes are soft.
Step – 5:
When the tomatoes are cooked well & add yogurt – 8 Spoon.
Step – 6:
Add chilli powder – 1 spoon, Kohinoor biryani masala (16 g) – 2 packets and cook well.
Step – 7:
Then add fried potatoes, mix well, cover with the lid, cook for 5 to 10 mins in low flame.
Step – 8:
Finally add a little coriander leaf, mint leaf and mix well then place in a bowl. biryani masala ready.
Let’s make dum:
Step – 1:
Place the prepared biryani masala first into the same pan.
Step – 2:
Add the boiled biryani rice.
Step – 3:
Add the fried onions.
Step – 4:
Add a some coriander leaf mint leaf.
Step – 5:
Turmeric milk (Or) you can use saffron milk as your wish.
Step – 6:
Again add cooked rice, fried onion, coriander leaves & mint leaves, turmeric milk (or) you can use Safforn milk as your wish & close with the lid and cook for 30 mins in low flame.
Step – 7:
After 30 minutes our delicious potato 65 Dum Biryani ready …
