Ingredients for Potato Gravy:
1. Potatoes – 200 gms (or as required)
2. Oil – required amount
3. Small onion (Shallots) – 8
4. Garlic – 10 cloves
5. Some coriander leaves
6. Tomatoes – 2
7. Red chili powder – 1 spoon
8. Coriander powder – 1 spoon
9. Turmeric powder – 1 / 4 spoon
10. Garam Masala Powder – 1/2 spoon
11. Kashmiri red chili powder – 1 spoon
12. Hing
13. Salt – required amount
14. Cumin seeds / Jeera – 1/2 spoon
15. Some curry leaves
16. Green chili – 1

Let”s start:
Step – 1:
Boil the potatoes in a pan. When it is 80% cooked, strain it, and set aside.
Step – 2:
In a pan, add oil – 4 spoons, small onion (Shallots) – 8, garlic cloves – 10 and fry for 2 minutes. Then add tomatoes – 2, add little coriander leaves and cook the tomato till it becomes soft.
Step – 3:
After the tomatoes are cooked well, keep the stove in low flame & add red chili powder – 1 spoon, Coriander powder- 1 spoon, turmeric powder – 1/4 spoon, garam masala powder – 1/2 spoon, Kashmiri red chili powder – 1 spoon, and a pinch of Hing, add salt and cook for 1 minute then turn off the stove. Cool completely.
Step – 4:
When it cools down, put it in a mixer jar, add a little water, and grind fine paste keep aside.
Step – 5:
In the same pan, add 3 spoons oil, cumin seeds, 1/2 spoon, some curry leaves, green chili – 1, and add masala paste mix well.
Step – 6:
Add the boiled potatoes and mix well then add 1 glass of water and mix well. Cover with a lid and cook till the gravy becomes thick.
