Mixed vegetable Curry recipe / Mixed Vegetable curry / Goki’s Kitchen

Ingredients for Mixed Vegetable curry:

To make kulambu (broth) powder:

1. Whole coriander seeds – 2 spoons
2. Rice (Sona masoori) – 1/4 spoons
3. Toor dal – 1/2 spoons
4. Fenugreek – 1/4 spoons
5. Black urad dal – 1/4 spoons
6. Red chili – 7

To make kulambu (broth):

1. Oil – 4 spoons
2. Cumin seeds – 1/4 spoon
3. Mustard seeds – 1/4 spoon
4. Some curry leaves
5. Garlic – 4 cloves
6. Small onion (shallot)- 10
7. Tomatoes – 4
8. Eggplant – 2
9. Chayote- 1
10. kohlrabi – 1
11. Broad beans – 10
12. The required amount of salt
13. Hing

Let”s start:
To make kulambu (broth) powder:

Step – 1:
In a frying pan, add whole coriander seeds – 2 spoons and dry roast the coriander seed until they are aromatic and lightly colored. Transfer to a plate and set aside.

Step – 2:
In the same pan, add rice – 1/4 spoon and dry roast in low flame until it turns light brown color. Transfer to a plate and set aside.

  

Step – 3:
Toor dal –  1/2 spoon and dry roast in a low flame till it turns slightly brown.  Transfer to the plate and keep aside.

Step – 4:
Fenugreek – 1/4 spoon and dry roast in low flame. Roast until it turns light brown color. Then transfer to the same plate and keep aside.

    

Step – 5:
Black urad dal – 1/4 spoon and dry roast until lightly browned. Then put it on the same plate and keep aside.

Step – 6:
Red chilies – 7,  dry roast in low flame for few seconds until they turn into light brown color. Keep aside.

Step – 7:
Put all the above items in a mixer jar and grind them fine powder and set the power aside. Broth powder is ready …

Step – 8:
Now, in the same pan add oil – 4 spoons, cumin seeds – 1/4 spoon, mustard seeds – 1/4 spoon, and then add some curry leaves, fry them well.

 

Step – 9:
Add garlic – 4 cloves, small onion – 10 and fry for a minute.

Step – 10:
Take 4 tomatoes of this size and mash them well by hand and cook till the tomatoes becomes soft.

Step – 11:
Add eggplant – 2, Chayote- 1, kohlrabi – 1, Broad beans – 10 and fry for 1 minute.

Step – 12:
Add the broth powder that we made and salt as required, a little bit of Hing, and mix all of them well.

 

Step – 13:
Add enough water and cook until the vegetables are very well cooked. Turn off the stove.

Step – 14:
Our multi-vegetable broth is ready …
